Lemon bars, also known as lemon squares, are an incredibly easy, bright and refreshing dessert. There are many variations, as there are with most desserts, however lemon bars most commonly feature a custard like consistency. While they are definitely tasty, I wanted to make a lemon bar that had more of a “fudgy brownie” consistency —not as “egg-y” and yet still moist and delicious.
For our recipe I opted for organic whole milk Greek yogurt instead of butter and only use 3 eggs instead of 6 or more like traditional lemon bar recipes call for. You can use plain regular yogurt or non-dairy yogurt as well, just make sure it isn’t low fat. The fat of the yogurt gives it the creamy consistency.
When making lemon bars, it is definitely better to use fresh squeezed lemon juice as it provides more flavor. They will however still taste delicious if you only have pre-squeezed lemon juice. Also keep in mind the type of lemons you use for the recipe. If you use Meyer lemons, the recipe will be sweeter and slightly less acidic or tart.
I used an 8.5″ x 11″ baking dish for my lemon bars so they were slightly thicker. You could also use a 9″ x 13″ baking dish and they will be a little thinner but will yield more squares. It’s easier to line your dish with parchment paper than to grease your pan when cutting and removing your bars. Have the parchment paper come slightly out of the pan on the sides to help remove the bars from your baking dish.
These lemon bars are so easy to make and require only 15 minutes prep time and 25-30 minutes for baking. Once cooled, sprinkle powdered sugar over the top for a tasty and beautiful finishing touch. Easy Yogurt Lemon Bars
Ingredients
- 1 ½ Cups All-purpose flour
- ½ Tsp Salt
- ½ Cup Brown Sugar
- ½ Cup Cane Sugar
- 3 Room temperature eggs
- ½ Cup Greek Yogurt Can sub plain full fat or non-dairy yogurt
- ¾ Cup Lemon Juice
- 2 Tsp Vanilla
Instructions
- Preheat your oven to 350°. Line your baking dish, either 8.5" x 11" or 9"x 13", with parchment paper.
- In large mixing bowl add flour and salt and mix.
- In a separate mixing bowl add three eggs and whisk together. Add brown and cane sugar and thoroughly mix. If you do not have brown sugar, you can just use cane sugar. Next add yogurt, lemon juice and vanilla and mix together.
- Slowly mix wet ingredients into flour mixture until completely combined. Pour mixture into your lined baking dish and bake for 25-30 minutes depending on the size of your dish. I recommend to start checking at 20 minutes if using a 9" x 13" dish. Remove once slightly brown and toothpick comes out clean.
- Let lemon bars cool and sift powdered sugar over the top. Enjoy!
