This is another great way to use those extra ripe bananas that you’ve been staring at on your counter (the riper the banana the sweeter). You will want to start with frozen bananas for this recipe. Simply slice your bananas and place on a baking sheet or plate in your freezer for 30 minutes. This way, the banana pieces do not clump together and are easier to manage. If you have a lot of over ripe bananas, freeze them and then store in a container in your freezer and you can always have bananas on hand for smoothies and desserts! Banana Peanut Butter “Ice Cream”
Equipment
- Food Processor
Ingredients
- 2-3 Sliced Bananas, Frozen
- 1-2 Tbsp Non-dairy milk We used Oat
- 2 Tbsp Peanut Butter Can also use cashew or almond butter!
- 1 Tsp Vanilla Extract
Optional Toppings
- Handful of Chocolate Chips
Instructions
- Start with sliced frozen bananas. Slice your ripe bananas and line on baking sheet or plate for 30 minutes or until frozen.
- Place frozen bananas and non-dairy milk in food processor and start pulsing. If consistency is still too thick, add additional tbsp of non-dairy milk and pulse until smooth.
- Add peanut butter and vanilla and pulse until incorporated.
- Top with you favorite topping and enjoy!
