A bright and refreshing cocktail perfect for Spring and Summer! Now I know some of you may be thinking, what the heck is a loquat? Loquats are in the same family as apples and pears, and have a taste similar to a blend of an apricot, plum and cherry. They are deliciously sweet when ripe and can sometimes taste slightly acidic.
The loquat originated in southern China and are frequently found in many herbal remedies. They are also popular in Southern Spain, Sicily and Israel. In the United States, loquats are mostly grown in California, Florida and Hawaii.
Loquats are a low-calorie fruit, that are high in vitamin A, calcium potassium and fiber. Aside from being extremely nutritious, loquats make delicious jams, pies, juices and cocktails! Now don’t worry, if you are unable to get loquats, you can substitute apricots or peaches for this recipe.
Our recipe features homemade simply syrup. Highly recommend making your own vs. purchasing it at the store. It is SO easy and you can make large batches to have on hand for a variety of recipes.

Sparkling Loquat Rum Cocktail

Ingredients
- 12-16 Loquats
- ¼ Cup Lime Juice
- ⅛ Cup Simple Syrup
- 4 Oz White Rum I used Bacardi
- 8 Oz Sparkling Water I used Perrier
- Ice
Homemade Simple Syrup
- 1 Cup Sugar
- 1 Cup Water
Instructions
- If making homemade simple syrup add one cup of sugar to one cup of boiling water. Stir until completely dissolved and turn off heat. Let stand until cool. Store extra in container in refrigerator. ** If you use raw sugar you will achieve a thicker, more syrup like consistency with a beautiful golden brown color.
- Thoroughly wash and remove seeds from loquats. Place loquats in blender with lime juice and blend until smooth. Add simply syrup and rum and blend. Taste and add more if you would like it sweeter.
- Fill glass with ice and half of the juice mixture. Top with your favorite sparkling water and garnish with a lime wedge and/or fresh mint. Cheers!
