Who doesn’t love a good French toast?! Every Sunday morning growing up, my mom would typically alternate between pancakes and French toast. If we had state testing we would get lucky enough to have it on a weekdays before school. It has always been one of my favorites. Nothing compares to delicious, warm cinnamon French toast!
Now take your favorite French toast and add pumpkin puree and toasted cinnamon pecans and I promise it will instantly become a favorite!
Let’s Talk Ingredients
Bread Options:
One of the most important ingredients when it comes to making French toast is bread. I typically opt for Brioche because it’s a soft, ultra buttery bread that absorbs liquid very well making it perfect for French Toast or even bread pudding. The difference between brioche and traditional bread is it is made with eggs, butter and milk.
Now if you can’t get your hands on brioche and are not up for making your own, I would recommend trying challah. Challah has a similar buttery taste like brioche but does not contain dairy. Another option is potato bread which will have a more soft and spongy texture. You can always use white sandwich bread but trust me… using brioche or even challah will really elevate the flavor and make it even more delicious.
Pumpkin Puree
It always tastes better to have homemade pumpkin puree. Simply roast a few sugar pumpkins and throw them into your food processor or blender to puree. But I definitely understand that it can be time consuming or just something you don’t really feel like doing. Canned pumpkin puree will also work just fine for this recipe. I did use canned for our video after all 🙂
Optional Toppings:
For our recipe, I use toasted cinnamon sugar pecans. Other great nut options would be walnuts or even almonds. I toasted mine in a pan for a few minutes but you could also roast them in the oven if you’d like to make a larger batch for future use.

- Powdered sugar
- Cinnamon
- Different flavored maple syrups like bourbon

Pumpkin Brioche French Toast
Ingredients
- 1 Loaf Brioche 10-12 slices
- 3 Eggs
- 1/2 Cup Creamer I used Soy Vanilla, can also sub milk
- 1/2 Cup Pumpkin Puree
- 1 Tsp Vanilla
- 2 Tsp Cinnamon
- 1 Tbsp Brown Sugar Can also use regular
- 1/4 Tsp Cloves
- 1/4 Tsp Nutmeg
- 1-2 Tbsp Butter For buttering pan
Optional Toasted Pecans
- 1/2 cup Pecans
- 1 tsp Cinnamon
- 1 Tbsp Brown Sugar
- ½ Tbsp Butter
Instructions
- If making toasted pecans: toast pecans in butter, brown sugar and cinnamon in pan for 3-5 minutes until lightly toasted.
- Crack eggs into medium mixing bowl. Add creamer, pumpkin puree, sugar and spices and whisk together until incorporated.
- Heat up pan or griddle to medium heat and add butter. Dunk brioche bread into mixture, coat on both sides and place into buttered pan. Turn over in about 2-4 minutes once golden brown. Repeat.
- Top with toasted pecans, butter and maple syrup or any of your favorite toppings and enjoy!
