This homemade Ginger Honey Tonic is one of our FAVORITES to enjoy year-round. It’s great to have on hand especially during fall and winter months when you may need an extra immunity boost! While we typically enjoy it cold, it also makes a perfect soothing and warming drink on a cold crisp day. Our Ginger Honey Tonic lets you skip store bought drinks loaded with preservatives and processed sugar. Its refreshing, tasty and best of all, good for you!

Good-For-You Ingredients
Fresh Grated Ginger: You will always find fresh ginger in our home! I also like to keep ginger powder and capsules on hand as well. Ginger is incredibly loaded with antioxidants– It can help reduce inflammation and pain, calm nausea, and improve digestive health. Ginger can also aid in fighting chronic diseases such as heart disease and high blood pressure.
Tips on storing ginger: Store in your produce drawer for a few weeks. You can also peel and chop your ginger and freeze in bite-size pieces. Perfect to add to smoothies or even tea. Be sure to spread the ginger pieces out on a plate first and freeze and then transfer to a freezer safe glass container or Stasher. This prevents the pieces from all clumping together.
Raw Honey: As I’ve stated in previous posts, honey found in many grocery stores are often over processed and not pure honey. When this happen, the honey losses many of its medicinal/beneficial properties. Always opt for raw, local honey if possible. Raw honey is also a great source of antioxidants and can help with digestive issues. It also has antibacterial and antifungal properties.
Apple Cider Vinegar: First off, what is apple cider vinegar (ACV) exactly? Basically, fermented apple juice! ACV has been used for hundreds of years as a natural remedy for many ailments.
When buying apple cider vinegar, I make sure it is raw, unfiltered and unpasteurized. This ensure, like raw honey, that we are getting the most benefits from the vinegar. There are many benefits to consuming ACV including: improves digestion, reduces bloating, aids heartburn, improves hair health, improves insulin sensitivity and can help lower blood sugar levels.
ACV also has many nutrients including: iron, phosphorus, magnesium, amino acids and antioxidants. Amazing!

Fresh Squeezed Lemon Juice: Lemon juice is another great digestive aid. It’s an excellent source of Vitamin C, which can help improve your immune system, fight off infections and heal wounds. Lemon juice also promotes hydration, can improve complexion/skin quality, and can aid in the absorption of iron.
Be sure to buy organic lemons, as lemon and other citrus fruits are often heavily sprayed in nasty pesticides. Or grow them yourself! Lemon trees do great in pots if you have a smaller yard. If you have extra lemons on hand, squeeze your lemons and freeze the juice in an ice tray. Use the lemon juice cubes for water, add to tea or even smoothies.
Filtered Water: Simple cold filtered water does the trick. You could also swap and use Alkaline or mineral water for more added nutrients!
How to Make
This recipe is pretty straightforward. You simply combine the above ingredients in a large mason jar and stir. I like to let mine sit in the fridge for at least 24 hours, however, you could also get away with 12 hours. When ready to drink, some people may prefer to strain but I don’t. I like to get all the added nutrients I can get! This also just depends on how finely you grate your ginger.
Optional Add-ins
Mineral Sea Salt: If you don’t use mineral water you could add 2 tsp of mineral salt. We love to use Redmond’s Real Salt
This salt actually has natural minerals and is protected from todays pollutants. Minerals are SO important for our body and many of us simply are not getting enough.
Cinnamon: Add approximately 3-4 tsp of Organic Ceylon Cinnamon. Ceylon cinnamon can help relieve joint pain, reduce inflammation and support digestive health.
Turmeric: Add about 2-3 tsp of Organic Turmeric/ Curcumin Powder. Turmeric or curcumin is one of the most best ways to fight inflammation. It also is loaded with antioxidants, and is great for the skin!

- Wide Mouth Glass Mason Jars – I use these to store everything from homemade juices and drinks to broths and stocks.
- Stainless Steel Grater – Perfect to grate your ginger right over your jar!
- Olive Wood Honey Dipper
- Glass Measuring Cup Set – Always opt for glass over plastic! Many plastics contain nasty ingredients linked to cancer and other terrible side effects (especially when heated!).
Anti-Inflammatory Ginger Honey Tonic
Ingredients
- 6 cups Filtered Water Can also use mineral or alkaline water
- 4 inch Fresh Grated Organic Ginger
- 6 tbsp Raw Local Honey
- 7 tbsp Raw Apple Cider Vinegar
- 3 tbsp Fresh Organic Lemon Juice
Optional Ingredients
- 2 tsp Mineral Sea Salt *If not using mineral or alkaline water
- 3-4 tsp Organic Ceylon Cinnamon
- 2-3 tsp Organic Turmeric Powder
Instructions
- Mix all ingredients in large mason jar or carafe. Let steep overnight ( approx. 12-24 hours). Enjoy!
